Rosemary Grapefruit Spritz: A Bright, Bitter-Sweet Party Drink
Grapefruit is the useful overachiever of the citrus world: tart enough to wake up a drink, bitter enough to keep it interesting, and friendly with both gin and zero-proof spirits. For a simple spritz, combine two ounces of grapefruit juice, one ounce of gin or a non-alcoholic botanical spirit, and a half-ounce of rosemary syrup over ice. Top with chilled sparkling water and stir once.
To make rosemary syrup, warm equal parts sugar and water with a small rosemary sprig until the sugar dissolves. Cool, strain, and refrigerate. Use a light hand: rosemary should suggest a garden, not taste like a candle. Add a grapefruit wedge and a short rosemary sprig as garnish.
For a lower-alcohol version, replace half the gin with more sparkling water. For a zero-proof glass, skip the gin entirely and add a squeeze of lemon for structure. Pair this with our zero-proof ginger-lime fizz for a two-drink menu.
